Home-Made Chocolate Truffles with Almonds and Bailey's

After having countless of Soon -Ee's delicious truffles for the past 2 weeks, I decided to give it a go! I guess I developed a flow (think Csíkszentmihályi), while making them. They were pretty easy to make though, and I'm so keen in experimenting them with different fillings and coating, as I go along. The process of truffle-making was a little time consuming,because I was rushing to rock-climb in the evening! I didn't think it was a successful success?!?? haha, it came out nice, but it didn't taste as exotic as I would want it to be.


LindT Chocolate Bars! - They are the better brands of chocolate in Melbourne, but it's my first try and so, i didn't want to get an expensive bar yet!


Melted Chocolate - get those with 60% or more cocoa
I'd prefer a sweeter and richer filling, so I added more milk chocolate than dark ones. It's your truffle, do whatever you want man!


Chopped Almonds - Roasted ones would give truffles a better taste!


Don't they look good? haha, after rolling them individually into imperfect truffle-looking, these chocolate were coated with generous amount of almonds.


Yum Yum!


Seems like I never fail to have a shot of me doing something!haha

I went to research on them, and apparently they can be stored in the fridge for weeks, or longer if frozen. I'll probably try putting raspberry in them in the next try! They sound good together - Dark Chocolate Truffle with Raspberry Filling! Probably place some gold leaves as well!heh!
